Gorgonzola Dolce DOP al cucchiaio
We could say that it is the best of all, that it is better than the others, actually, we feel more serious to tell you the reasons for our choice and to introduce you to the differences of the various types of Gorgonzola that we have included in our assortment: this Gorgonzola DOP is sweet and creamy suitable for spooning as it is much creamier than the others, which are in our assortment, and it is available upon request, both in half and whole wheels, both in the plastic container and in the beautiful wooden type container with our logo, including a lid to reduce oxidation of the opened cheese.
Whether it is better than others will be decided by the consumers, or at any rate those who taste it, not us who offer it, but for sure, there is one basic requirement compared to all other cheeses that can be kept in a refrigerated counter: this cheese, diminishes its gustatory fragrance every time that it is opened, precisely because when opened, it tends to oxidize the paste exposed to the air and therefore every day it inevitably loses some characteristics or to put it in other terms, it definitely changes its taste with each passing day, so it will be fundamental that the professional who uses it, will try to finish it in the shortest time possible.
Obviously, it is not refined by us, since it is a PDO, but our work of selection has been long and difficult, in fact to choose the one that to date we have decided as our producer, has been the result of analysis, tasting and tests that have led us to mature the choice that does not revolve solely in organoleptic or structural characteristics, but reliability and seriousness of the producer, historicity, etc. We don’t blame the other, albeit good producers, but we made our choice believing that we were making the best choice with the producer whose characteristics most closely resembled our working visions.
One remark we make, is that the real gorgonzola for us is the spicy one, but since the spicy one is consumed only by a few amateurs, instead this one pleases the majority of people, we wanted to please all those who asked us for the soft “spoonable” cheese because it is indeed nice to look at and mouthwatering…. however, if we want to be technical and we want to show everyone our affection for this, which is one of the cheeses we are most fond of, namely Gorgonzola Dop, in our opinion, it always deserves to be cut with the special knife and looked at in the paste and in section, the structural characteristics should be seen, observed and tasted with the eyes, even before tasting it with the mouth, so that this work of art can be enjoyed in all its aspects. We have offered it by the spoonful for all those who have asked us for it, but appreciate our candor in telling you that it is best cut by the knife.
Enjoy it whenever you like, with whomever you like and as much as you like, used as a cooking ingredient or on its own at the end of the meal, enjoy it to the full, tomorrow is another day.
