This cheese is a lactic-presamic process, made from three different types of milk (cow, sheep and goat) and besides being aesthetically pleasing, it is very pleasant and appetizing due to its high acidity, which all in all is balanced against the rest of the flavors.
We sprinkled ground black pepper in the shape of the mask in order to give a lively touch to this characteristic carnival mask.
