BRIACACIO – Blue Cheese of sheep’s milk
This cheese is an invention, born from the desire to create a “dessert” cheese or a cheese to be enjoyed instead of dessert, at the end of a meal or even as a meditation… here we succeeded! This cheese is one of the cheeses we are most proud of as it has won the most metals:
In 2014 it won the Award of Excellence at INFINITI BLU, and in 2015, 2016 and 2017 always at the same competition it obtained the recognition of Quality. In 2016 it also won the Gold Medal at ALMA CASEUS in the blue cheese section.
At the World Cheese Awards 2017-2018 in London it was awarded the Bronze Medal.
At the 2018 San Lucio Trophy it won the Silver medal.
It is a blue pecorino matured under the alcoholic bath and the varieties of raisins used by Pasticceria Bonci di Montevarchi for the production of their famous PANBRIACONE.
It has a compact and crumbly structure that sometimes creates problems in cutting it, also due to the higher humidity to which it is subjected in the aging phase, but the result is surprising, since inside has remained its strong character, which is mitigated and sweetened by the raisins and the water itself. A cheese that excites, absolutely to be enjoyed with the rind and its raisins, where we find the sugar concentration that makes it so unique and very balanced.
Pasteurized sheep MILK, lactic ferments, rennet, salt, penicillium roqueforti, food bath, and raisins. ALLERGENS: MILK and MILK protein
End-of-meal or meditation cheese, can be used for other dishes.
Any sweet dessert wine with very little acidity.
